4 Energy Boosting Breakfast Ideas
Fatigue is very common, especially due to our fast paced and busy lives. Sleep, exercise and nutrition are the key factors in keeping normal energy levels. This is especially important at breakfast time. Breakfast is the most important meal of the day because it kick starts your metabolism after hours of sleeping. So there are a number of high-energy breakfast options that you can eat to start your day with an intake of clean energy. Here are a few recipe ideas that will boost your energy throughout the day:
1. Tofu Veggie Scramble
This protein rich breakfast will give you the energy you need to start your day. Best served with a slice of toasted bread and a bit of parsley on top. This dish is very filling and super nutritious.
- 1 small red capsicum, finely chopped
- 1 white onion, chopped
- 4 mushrooms, diced
- 200g baby spinach
- 2 tbsp olive oil
- 1/2 teaspoon ground coriander
- 130g blocks extra-firm tofu
- 1 1/2 teaspoons ground turmeric
- Pinch salt, pinch pepper
Once drained, smash tofu.
Heat oil in a fry pan over medium-high heat. Add onion and capsicum; cook, stirring occasionally, until softened, 3-4 minutes.
Stir in mushrooms, baby spinach, tofu, coriander, and cook until fragrant. Stir in tofu, then turmeric. Season with salt and pepper.
Serve with a side of brown bread.
2. Banana Blender
This creamy smoothie is sure to keep those nasty colds and flues away. With a hint of ginger this blend will have your skin shining and your immune system working well. Plus you will get a boost of potassium from those yummy bananas.
- 2 cup almond milk
- 2 banana
- 2 tsp of fresh ginger, skin removed
- 2 tsp almond butter (bought in the health food store or supermarket)
- 4 medjool dates, without pip
Blend all ingredients together, with ice if you like.
Blend until the mix reaches the consistency you like.
3. Almond Banana Bread
High in potassium and good fats, this banana bread will want you going for seconds. Extra tasty with nut butter or jam, you might think this is a dessert bread, but it is actually very healthy and can be eaten anytime of the day.
- 1 cup almond meal (bought in the health food store or blitz 1 cup almonds)
- 2 ripe bananas, mashed
- ½ cup oat flour
- ½ cup unsweetened almond milk
- 2 tbsp ground flax mixed with 6 tbsp water
- ¼ tsp baking soda
- ½ cup coconut sugar or stevia or honey
Preheat oven to 180°C
Sift together the oat flour, almond meal and baking soda
Then whisk in the flaxseed/water mix
Then place all ingredients together in a blender and blend
Line a bread tin with parchment paper
Pour mixture into bread tin
Bake for 40 minutes until toothpick comes out clean
Let cool, slice and serve with nut butter
4. Cinnamon Infused Oats
This recipe is a great twist on tradition porridge. The cinnamon infuses into the oats to give an amazing aroma. This meal will provide you with heaps of energy for your day and provide you with lasting fullness. The apple and the oats are high in fiber, which will leave your stomach feeling amazing.
- 2 cup soy milk
- 1 apple, grated
- 2 cinnamon or chai tea bag
- 1 cup oats
Place the apple, soy milk and tea bag in a pot and simmer for 4 minutes
Add the oats to the pot and let simmer for a further 3 minutes
Pour into a bowl and serve.
